Kosher Crunchy Asian Chicken Salad

Serves 4

4 frozen breaded extra crunchy chicken patties or cutlets

6 cups romaine lettuce, washed and chopped

½ cup dried cranberries

½ cup slivered almonds

1 cup canned mandarin orange segments, drained

1 medium cucumber, diced

1 cup grape tomatoes

Bottled Asian sesame-ginger dressing

Optional: 1 cup chow mein noodles

Kosher Crunchy Asian Chicken Salad instructions

  1. Prepare the breaded chicken patties or cutlets according to the instructions on the package. Cut into 1” pieces.
  2. In a large bowl, combine lettuce, cranberries, almonds, orange segments, cucumber and tomatoes. Add chicken patty pieces.
  3. Toss salad with Asian sesame-ginger dressing to taste. Optional: Sprinkle with chow mein noodles just before serving.
  4. Divide salad onto four plates and serve.
